Quantitative Analysis of Anthocyanins among Mulberry Cultivars and Their Pharmacological Screening



Abstract
This study was conducted to select fruit species and mulberry (Morus alba L.) cultivar containing higher level of anthocyanins, and to screen their phamacological effect. Mulberry fruit had the relatively more amount of anthocyanins compared with apple and grape fruits. Of ten mulberry cultivars ¢¥Jasan¢¥ showed the highest level of anthocyanins and was used as the sample for pharmacological screening. The anthocyanin extracted from mulberry fruits had little direct effect in rat aorta.
